Faema Culinary Academy

Faema Culinary Academy runs its classes in the private test kitchen behind the espresso-machine showroom on Dupont Street, and the calendar is built around four Italian disciplines: pizza, pasta, gelato and coffee. La Pizza Napoletana and La Pizza Romana are the signature evenings — three hours with master pizzaiolo Pasquale Ponticiello, starting with charcuterie and wine while he walks through dough, flour and the history of the pizza, then moving to hands-on kneading, rounding, stretching, topping and baking, with dough to take home and the pizzas shared at the end. Shorter pasta and gelato workshops, barista training levels and private group bookings round out the schedule.
