Bar Romy opened in July 2026 in the Adelaide Street room that used to be Figo, and it is the most easy-going of INK Entertainment's downtown properties. The brief is a neighbourhood Italian bar: hand-made focaccia, panini, Roman-style pizza, and pasta sourced from Famiglia Baldassarre up on Geary — the Michelin-recognised pasta shop whose two-hour lunch queue is the stuff of Toronto legend. Chef Ben Heaton keeps the cooking unfussy, the wine list is built for drinking rather than collecting, and the room runs from a quick pre-theatre bite through to a late licence on Thursday to Saturday.
