FIUME opened at the Perth Parkside Hotel in late 2025, pairing Italian cooking with steakhouse cuts in a room that doubles as one of Lanark County's wedding venues. The menu runs from pasta and antipasti to grilled steaks and seafood, and it serves seven days a week — noon to nine Sunday to Thursday, later on Friday and Saturday. It is the dressier end of Perth dining, and reservations are through the hotel.
