Violets is what Stelvio became in 2026: the same Dundas Street West address and the same northern Italian foundation, with a menu that follows the seasons rather than a fixed regional script. The cooking stays rooted in the Italian north — mozzarella in carrozza, mussels panzanella, Dungeness crab ravioli, Ontario flat iron steak, charred baby gem — but plates are built with a little more curiosity than the old room allowed.
